Homemade Phyllo and Cheesy (Sariyer) Borek

Ingredients
3 1/4 cups flour
1 1/4 cups water
1 1/2 tsp salt
1/4 tsp granulated sugar

For the Butter Layer:
1 stick butter
1/2 cup olive oil (or 1/3 cup if you prefer less oily)

For the Filling:
150 g feta cheese
1 cup mozzarella
1/2 cup chopped parsley

Instructions
In a medium bowl, mix the flour, salt, sugar, and water until well combined. Add the olive oil and using your hands knead the dough until smooth for 4-5 min.
Wrap the dough with plastic wrap and let it rest at room temp for 15-20 min.
While waiting for the dough to rest, in a small bowl, mix the room temp butter until creamy, and set aside.
Place the dough onto a lightly floured surface and divide the dough into 12 equal pieces (each piece should weigh around 60g).

Roll each piece into a ball, then roll each ball out into a thin 7-inch circle. Place a piece of dough onto a work surface and spread 1 1/2 tbsp the creamy butter then cover with the other piece and gently pinch the edges to seal as in the IG Reel. Repeat this process with the remaining pieces; at the end, you are gonna have 6 pieces.

In a plate, spread 2 tbsp olive oil and place the first layer of the dough. Spread 2 tbsp oil over top and place another piece of dough. Complete 6 layers by repeating this process.
Cover the plate with plastic wrap or with another plate and let it rest for 30-40 min.
In a small bowl, combine feta, mozzarella, and parsley. Set aside.
Preheat the oven to 400F.
Lightly oil the work surface and gently place a piece of dough onto the surface. Using your hand, gently press the dough and gently hold the edges and stretch as shown in the Reel. Repeat this process, and stretch all the edges of the dough.
Fold the bottom edge to the center. Lay out 1/2 cup filling onto the bottom edge. Fold the side edges to the center. Tightly roll up the dough from the long sides and shape the dough as in the IG Reel. Place the borek on a baking sheet. (Leave some space between the boreks to make sure that they don't touch each other while baking). Repeat this process with the other dough pieces.
Bake for 30-40 min until golden brown. Remove from the oven and serve warm.
